Italian Meatloat...yes, meatloaf!


Caramelize one medium onion.


Start with 1 lb. ground beef, 1 c. chopped zucchini, 2 tbsp. balsamic, salt and pepper.


Add the onions and mix just enough to blend.


Add two eggs and mix again just enough to blend.


Free from into a nice round on a silpat.  Bake in the oven at 350 degrees for 35-45 minutes.


Chop 5 Roma tomatoes and mince 3 garlic cloves and saute in 1 tb. olive oil.  Cook until reduced.  Add in 1/4 c. minced basil the last few minutes of cooking.


Put tomato mixture in a sieve.



Slather tomato onto meatloaf and top with 1/2 c. mozzarella.


Rosemary potatoes as an accompaniment.



It was quite good...for meatloaf.  Kids loved it too.
