What's cooking?

Another new favorite...

BBQ Shrimp Salad

1 pound shrimp, tail on.
3/4 c. bbq sauce  (I make my own, and every time it is a little different.  I need to write down the base at some point!)
6 cups mixed romaine and spinach greens
1 avocado, diced
1-2 tbsp. olive oil
1/2 lemon
freshly ground pepper

Heat grill to medium high heat.  Mix shrimp with all but 1/4 c. bbq sauce.  Add to grill and cooking 3-5 minutes until shrimp is done.  Set aside to cool slightly and remove tails.

Mix remaining bbq sauce with olive oil, depending on taste.  Add shrimp and avocado to greens, then juice lemon and pepper to taste.

Absolutely delicious and perfect for a hot day!
